Banketstaaf – Dutch Pastry Filled with Flavorful Almond Paste

The banketstaaf, with its flaky pastry and center of amandelspijs (almond paste), is pretty much as traditional as it gets for the Dutch holidays, and perfect for your table of Sinterklaas treats, along with some kruidnoten cookies, speculaas cookies, marzipan, fondant candy, oranges and Bishop's Wine.

While it may look like it would be really complicated to make a banketstaaf, that couldn't be further from the truth (well, I use ready-rolled puff pastry and I'm not embarrassed to admit it either). If you really want to 'cheat', you can also use store-bought spijs, but if you have a food processor, it's really easy to whip up your own.

I currently live in the Netherlands and love almond paste, but my husband and I are moving to the U.S. and I am trying to find if almond paste is readily available or any items that have almond paste in it. Any help would be appreciated.

There are many online grocery stores abroad that sell ’spijs’ and products that have almond paste in it.
