If you've ever enjoyed a cup of coffee in a Dutch café, chances are that you're familiar with bitterkoekjes, those crispy almond cookies that are served almost as a standard in the Netherlands' hospitality industry. This gluten-free ice cream recipe puts the ubiquitous cookie to good use; their bittersweet taste provides contrast to the chocolate-studded sweetness of the ice cream, while their texture adds crunch to the creamy concoction. If you can't find these Dutch cookies where you live, simply use amaretti instead. Serve this ice cream as is, or step it up a notch and make a bitterkoekjes ice cream cake. It's just the thing for summer birthdays and barbecues.
