This spiced multi-layered cake is an excellent example of the true fusion that exists between Dutch and Indonesian traditions in the Netherlands. Recipes for spekkoek have long been appearing in Dutch cookbooks; one version in Recepten van de Haagsche Kookschool (1899) features a whole nutmeg and 65 cloves! This spekkoek recipe from Het Nederlands Bakboek takes a subtler approach to spicing and fewer eggs than many other spekkoek recipes (some of which use up to 20 eggs, according to our Indo-Dutch foodie connections!).
