Uitsmijter Recipe — Dutch Sandwich with Fried Egg & Ham

An uitsmijter is a typical feature on Dutch cafe menus and this lunch-time classic certainly appears on our family table at least once a weekend. Traditionally, the meal consists of fried eggs (sunny side up) on white bread, with ham and, sometimes, Gouda cheese. We prefer it on wholesome whole wheat bread and often sautee a handful of spinach or kale in the frying pan before adding the eggs.

The word uitsmijter means 'bouncer' in Dutch and the story goes that pub owners used to make this dish for clientele in the early hours before pushing them out the door.
