For some mysterious reason, the Dutch call brandy soaked raisins
boerenjongens (literally,
farm boys). They use them in all kinds of dishes, but I love them in this ice cream.
Please note: this recipe requires an ice cream maker. Ice cream makers can be pricey but they are also a notoriously unwanted gift, and therefore often end up on sites like eBay at bargain prices. If you love ice cream I am sure you will not regret buying one.

Cook Time: 40 minutes
Ingredients:
- 1/3 cup raisins(40 g)
- 2 tbsp brandy
- 2 egg yolks
- 1/3 cup castor sugar (75 g)
- 1 tsp vanilla extract
- 1 cup full-fat milk (250 ml)
- 2/3 cup cream (150 ml)
Preparation:
Soak the raisins in the brandy for a few hours. In another bowl, beat the yolks, sugar and vanilla extract until foamy. Add the milk while stirring. In a separate container, beat the cream until it forms floppy soft peaks. Fold the whipped cream through the other mixture. Now follow the directions of your ice cream maker to freeze. Add the brandied raisins halfway through the freezing process.
Serves 4
TIPS:
This dessert uses uncooked eggs. If that scares you, you can always used pasteurized eggs. Organic eggs are usually pretty safe though.
