I love a good Caribbean ginger beer, but the commercial varieties often have such chemical-looking additives that I have been wanting to make my own version at home. A study of homemade ginger beer recipes quickly left me with the impression that it takes up to one week to make a proper brew. And then there's the risk of exploding bottles -- scary! Who needs the stress?

Ingredients:
- 1/4 cup ginger syrup
- 1 tbsp lime juice
- soda water
- Optional: stem ginger to decorate
Preparation:
Place a piece of stem ginger in the bottom of a glass. Pour in the ginger syrup and the lime juice. Top up with soda water and gently stir. Serve immediately.
TIPS:
You should be able to find bottled ginger syryp in the baking section of your supermarket, or at Asian stores. A good one should only list ginger and sugar as ingredients.
