What could be better on a cosy winter night in than a hot drink spiked with a shot of something naughty and delicious? Liquor-laced coffee drinks, such as
Irish coffee, are enduringly popular and this Dutch variation on the theme uses Schelvispekel liqueur (a spiced Dutch brandy that tastes of traditional Dutch
speculaas). The coffee is topped with whipped cream and toasted almonds, mimicking the shaved almond topping typically found on these gingerbread-flavored cookies.
If you can't find this artisanal liqueur where you live, simply use 1 oz brandy and 1 oz gingerbread liqueur.
Or, for a non-alcoholic drink, add some speculaas spices to finely ground coffee (using a French press) and then make the coffee as you would normally.

Yield: Makes 1 cup.
Ingredients:
- 2 oz Schelvispekel (spiced Dutch brandy)
- Hot black coffee
- Brown sugar, to taste
- Whipped cream
- Shaved almonds, toasted in a dry frying pan, to garnish
Preparation:
Pour the Schelvispekel into a mug or heat-proof glass. Fill with freshly brewed hot coffee. Add brown sugar to taste and stir.
Top with freshly whipped cream and garnish with toasted shaved almonds. Serve immediately.
