Definition: Asparagus = Asperges
The most traditional Dutch recipes simply call for the asparagus to be gently cooked and served with either melted butter or Hollandaise sauce, chopped boiled eggs and ham.
Once looked down upon as peasant food (note the humble way it was painted), the Dutch now consider asparagus to be ‘white gold’ (the white variety, that is, which is called witte asperges). Green asparagus (groene asperges) is also loved in the Netherlands.
