Definition: Kwark = Quark.
Quark, otherwise known as curd cheese, is a soft, fresh cheese. It is not aged, delicately white, and rather similar to French fromage frais. The Dutch often use it to make a kwarktaart, a less tart cousin of the cheese cake. They also enjoy it as a dessert, with fresh fruit or eat it as you would yoghurt. Dutch quark comes in full fat (volle kwark), half fat (halfvolle kwark) and fat free (magere kwark) versions, in plain or fruit flavors.
