Definition: Poffertjes = baby pancakes.
Known as poffertjes in Dutch, these baby pancakes are made of a mixture of buckwheat- and regular flours. They are cooked in a special poffertjes pan, which has around a dozen or so tiny indentations. Unlike regular pancakes, poffertjes have yeast added to them, which results in a fluffier texture. The meaning of the Dutch name, poffertjes, refers to their puffy shape.
