These savory muffins are made with oude kaas, that delicious aged Gouda. I recommend Olde Remeker, but Old Amsterdam from the supermarket will do nicely too. And if you can't find that, simply use a good Parmesan cheese instead. The use of cumin seeds is, of course, a play on komijnekaas (Dutch cumin cheese).

Ingredients:
- 2 1/2 cups self-rising flour (225 g)
- 1 tsp sugar
- 1/4 tsp salt
- 1 cup oude kaas (plus a little extra for on top), grated (180 g)
- 3 1/2 tbsp butter, melted (50 g)
- 1 1/2 cup milk (350 ml)
- 1 egg
- 1 tsp cumin seeds
Preparation:
Preheat oven to 390 degrees F (200 degrees C). In a large bowl, mix together all the dry ingredients (except the cumin). In a separate bowl, beat the wet ingredients together, and add to the dry mix. Stir until just combined. Spoon into a greased muffin tray (about 3/4 full) and top with a sprinkling of cumin seeds and some extra grated cheese. Bake for 15 to 20 minutes or until a skewer comes out clean when inserted into the center.
Makes 12.
Tips:
For a more pronounced cumin flavor, simply add toasted cumin seeds to the batter.
You could also add chopped sunblanched tomatoes, finely diced roasted veggies and/or your favorite fresh herbs.
