Star Pancakes with Smoked Fish & Three Sauces

Smoked fish served with blini are a classic combination, and you could use poffertjes, the Dutch cousin of blini here, but we think that these star-shaped pancakes are fresh and festive for the holidays. Using different types of smoked fish, such as smoked salmon, herring, halibut or mackerel, really makes it a feast.

Ingredients:

  • For the pancakes:
  • 1 cup white flour (140 g)
  • 1/4 tsp baking powder
  • 1/2 tsp salt
  • 1 cup milk (250 ml)
  • 1 egg
  • 1 tsp butter
  • 1 tsp oil
  • For the horseradish sauce
  • 1/2 cup creme fraiche (125 ml)
  • 2 tbsp finely chopped parsley
  • 1 tbsp prepared horseradish
  • 1 tsp white vinegar
  • Salt and freshly ground pepper, to taste
  • For the mustard & dill sauce
  • 4 tbsp homemade Dutch mayonnaise
  • 1 tbsp grainy mustard
  • 1 tbsp fresh dill
  • Salt and freshly ground pepper, to taste
  • For the sour cream & red onion topping
  • 1 small tub of sour cream
  • Salt and freshly ground pepper, to taste
  • 1 small red onion, finely sliced
  • You will also need:
  • Smoked salmon
  • Smoked herring
  • Smoked halibut
  • Some fresh soft herbs, such as dill, tarragon and flat-leaf parsley, to decorate
  • Special equipment:
  • A star-shaped cookie cutter

Preparation:

To make the pancakes:

Mix the flour, baking powder, salt and a little of the milk to a smooth paste. Add the remaining milk gradually, while whisking. Add the egg, beating the mixture well. For a lighter texture, leave to rest for a few hours or overnight. Melt the butter and oil in a large frying pan and wait until it sizzles. Pour in enough of the mixture to cover the entire surface of the pan (spread the mixture evenly by tilting the pan). Bake until bubbles appear on the surface and turn over. The pancakes should be pale gold on both sides. Set aside to cool. When the pancakes are cold, place them - one by one - on a wood cutting board and use a star-shaped cookie cutter to make little star forms. Place the star pancakes on serving plates.

To make the horseradish sauce

Mix all the ingredients in a bowl. Set aside.

To make the mustard & dill sauce

Mix all the ingredients in a bowl. Set aside.

To make the sour cream topping

Mix the sour cream with the salt and pepper. Slice the onion into gossamer-thin half-moon slices, and set aside to use as a topping later.

Assemble the appetizers

Top the pancakes with the smoked fish, using only one fish per star-shaped pancake. Top the salmon pancakes with the horseradish sauce and decorate with flat leaf parsley. Serve the herring with the sour cream sauce and decorate with the red onion. And top the halibut with the mustard and dill sauce and top with a sprig of dill.

Tips:

  • Make the pancakes and sauces the day before and keep in the refrigerator, covered with plastic wrap. Or, if you're not much of a cook, use store-bought pancakes.
  • You can serve as many types of smoked fish as you like, or you can stick to one kind, but make sure it's the best quality you can afford. Or, if you're adventurous, why not try smoking your own fish this year?
