This recipe, taken from 'Kookboek voor Meisjes van 8 tot 88' (Cookbook for Girls from 8 to 88) is like cross between a Caesar salad and a Nicoise salad, but with a Dutch twist: smoked mackerel. Delicious!
Cauliflower Salad
Harness all of cauliflower's cancer-fighting properties with this crispy cauliflower salad, featuring red onion, chile, lime and coriander.
Coleslaw (Koolsla)

I think most people simply don't know what to do with it. I love kohlrabi’s subtle cabbage taste and crisp bite and I think it’s perfect for salads, like my Crunchy Kohlrabi Salad.

Redcurrant & Feta Salad
This fusion salad delivers hot, sour, salty and sweet flavors to your tongue. Against a backdrop of peppery arugula, the tart taste of Northern European redcurrants, and salty feta and briny black olives from the Mediterranean is tempered by an Asian-ish dressing of sweet ginger syrup, lime and spicy chile oil.
Taboulleh (Moroccan Bulghur Wheat Salad)
This salad, featuring bulghur (that delicious and healthy cracked wheat), tomatoes, scallions, mint, parsley and feta cheese is a welcome addition to any table. I often make a meal of it, but it works just as well as a side dish at a summer barbeque or alongside some lamb chops rubbed with Ras El Hanout, my favourite Moroccan spice rub.
