Redcurrant Relish

My Redcurrant Relish is sure to add some zing to your summer barbeque. I love it with grilled lamb chops -- the tartness seems to cut perfectly through lamb's richness. I also think it goes great with a ham sandwich. And it makes a colorful and unusual addition to any cheese plate.
Ingredients:
  • 1 cup redcurrants
  • 1/2 red onion, peeled
  • 1/2 red chili, seeds removed (or a whole one if you want it spicier)
  • Juice and zest of 1/2 a lime
  • Salt & Pepper
Preparation:
Place all the ingredients in a food processor and pulse approx. 5 times so that you have a salsa-like consistency. Season to taste.

Tips:

If you don't have a food processsor, simply chop the onion and chili finely, halve the redcurrants and add to a bowl along with the lime zest and juice. Mush a little with the back of a fork, and season to taste.
