Ingredients:
- 1 cup redcurrants
- 1/2 red onion, peeled
- 1/2 red chili, seeds removed (or a whole one if you want it spicier)
- Juice and zest of 1/2 a lime
- Salt & Pepper
Preparation:
Place all the ingredients in a food processor and pulse approx. 5 times so that you have a salsa-like consistency. Season to taste.
Tips:
If you don't have a food processsor, simply chop the onion and chili finely, halve the redcurrants and add to a bowl along with the lime zest and juice. Mush a little with the back of a fork, and season to taste.
