Cauliflower is not very fashionable right now, but I predict a comeback soon -- it is so incredibly versatile! While I will freely admit that my Cauliflower Crush is not quite as comforting as real mashed potato, it is a lighter alternative that will not induce a carb coma and is still very satisfying. Besides, it is really really quick and easy to make... perfect for mid-week meals on the run.

Ingredients:
- 1 1/2 cups cauliflower fleurets (350 g)
- 1 tbsp water
- 1 tbsp butter
- 1/4 tsp nutmeg
- Salt and pepper to taste
Preparation:
Microwave the cauliflower fleurets with water in a covered microwave-safe dish for 5 minutes. Drain well and pat dry with a kitchen towel. Mash with butter and nutmeg. Season with salt and pepper. Serve.
